Honey Wrapped Pears

I found this recipe on ALDI test kitchen website purely by googling poached pears.  I've made some changes to the recipe to suit my pantry.  The recipe calls for 4 pears but I've gone with three and slightly altered the amounts on each of the ingredients.

4 pears
4 cups of water
2 cups of raw sugar
1 cup of honey - I've used 100% pure Tasmanian clover honey produced by The Backyard Bee
1/2 lemon, juiced
3 cinnamon sticks
3 whole cloves
1 vanilla pod, broken in half
2 sheets of puff pastry

Preheat oven to 180, line a baking tray with baking paper. Peel your pears and set them aside, I also cut the pears bottoms so they sit nicely.  In a medium saucepan, combine water, sugar and honey; bring to a simmer over medium - high heat.  Once the sugar has dissolved, add the pears, lemon juice, cinnamon sticks, cloves and vanilla pod.  Simmer until the pears are fork tender, about 30 minutes.

Once tender, remove from pan and allow to cool.  Continue to simmer the poaching liquid until reduced to 1/2 cup.

Cut pastry into thin stripes and wrap them around the pears, starting at the base working up. Pop them into the oven for around 20 minutes or until golden.  Serve with a drizzle of the reduction.
